  1. This recipe draws on the lighter texture of ground turkey and the full flavor and moisture of beef to create the ultimate summer burger. It’s seasoned with fresh herbs and served on French bread spread with lemony mayonnaise to give it a taste of southern France.

  2. MAYONNAISE 1/4 cup reduced-fat mayonnaise 1 tablespoon chopped fresh tarragon 2 teaspoons lemon juice 1 teaspoon grated lemon peel BURGERS 3/4 lb. ground turkey 1/2 lb. lean ground beef chuck 2 tablespoons chopped fresh chives 1 tablespoon chopped fresh tarragon 1/2 teaspoon salt 1/2 teaspoon freshly ground pepper 4 French rolls, split, or 8 slices French bread 4 thick slices tomato 3/4 cup arugula 1. In small bowl, stir together all mayonnaise ingredients.

  3. Heat grill. In large bowl, gently but thoroughly mix together ground turkey, ground beef, chives, 1 tablespoon tarragon, salt and pepper. Shape into 4 (4-inch) patties. Place on gas grill over medium-high heat or on charcoal grill 4 to 6 inches from medium-high coals; cover grill. Grill 12 to 14 minutes or until no longer pink in center. During last few minutes of grilling, lightly grill rolls to toast.

  4. Spread toasted rolls with mayonnaise. Top with burgers, tomato slices and arugula.
