  6. 1/2 lb Glutinous rice powder

  7. 2/3 c Boiling water

  8. 2 Chinese brown slab sugar

  11. 1/2 c Dark brown sugar

  12. 1/2 c Sweet red bean paste

  13. 1/2 c Sesame seeds

  14. Peanut oil for deep-frying

  15. PLACE THE GLUTINOUS RICE POWDER in a mixing bowl.

  16. Bring the water to a boil and add the sugar; stir

  17. until completely dissolved. Pour sugar water into the

  18. rice powder; stir until well mixed. Gather the dough

  19. into a ball and knead until smooth. Cut dough in half

  20. and roll each half into two 10-inch long rolls. Cut each roll into 10 pieces. Take one piece and roll into a ball. Flatten it and place a 1/2-inch round piece of

  21. sweet red paste into the center of dough. Fold over

  22. sides to enclose filling and roll into a ball. Repeat

  23. until all the balls are made. Wet your hands with

  24. water and roll one ball in your hands to moisten the

  25. ball. Dip the ball into a dish of sesame seeds until

  26. the entire surface is covered. Press lightly to help

  27. the seeds adhere. Add enough oil to a wok to a depth

  28. 2 1/2-inches. Heat to

  29. 350F. Deep fry balls for 8 to

  30. 10 minutes. As they expand in the oil, take a pair of

  31. chopsticks and squeeze the balls to help them expand and fill with air. The balls should triple in size,

  32. float to the top of the oil and turn golden brown.
