  1. 600 g of chicken or pork, cut into cubes and pounded lightly

  2. 2 cucumbers, sliced

  3. 2 onions, peeled and sliced

  4. 40 satay sticks (skewers)

  5. Rempah to Blend (spice mix):

  6. 1 stalk lemongrass, peel and use white portion

  7. only, 10 shallots, peeled,

  8. 2 tsp coriander powder,

  9. 1 tsp cumin powder,

  10. 1 tsp turmeric

  11. 1/4 tsp cinnamon powder,

  12. 1 1/2 tsp

  13. 2 tsp sugar,

  14. 2 tbsp ground roasted

  15. peanuts, 1 tbsp oil

  16. Marinade meat with rempah for 30 minutes, skewer the meat. Grill satay

  17. 240oC for 5-7 mins on each side, basting with oil during cooking. Serve with peanut

  18. sauce, cucumber and onions.

  19. Peanut sauce:

  20. 2 stalks lemongrass (white portion only),

  21. 180ml oil,

  22. 4 rounded tbsp tamarind

  23. 4 to 6 cups of water,

  24. 4 tbsp sugar,

  25. 1 tbsp salt,

  26. 4 to 5 tbsp oil.

  27. Rempah to blend for Sauce:

  28. 12 slices of galangal,

  29. 12 peeled shallots,

  30. 6 cloves garlic,

  31. 20-30 softened

  32. dried chilli, 1 tbsp prawn paste.

  33. Knead tamarind pulp with 2 cups of water and strain. Heat a wok over a

  34. high flame, add oil. Stir fry the rempah and lemongrass till fragrant. Add

  35. tamarind water, boil for 2 minutes before adding sugar, salt ,

  36. ground peanut and about 2 cups of water. Simmer until the sauce thickens.
