  2. Meatballs:

  3. 1 pound ground beef

  4. 1/2 cup soft fresh breadcrumbs

  5. 1/3 cup grated Parmesan cheese

  6. 2 tbsp. chopped fresh parsley

  7. 1 tsp. dried oregano

  8. Soup:

  9. 5 1/2cups beef broth

  10. 28 ounce can Italian-style chopped tomatoes

  11. 6 medium carrots, peeled and diced

  12. 4 medium potatoes, peeled and diced

  13. 2 small onions, peeled and chopped

  14. 4 cloves garlic, chopped

  15. 2 tsp. dried thyme

  16. 2 tsp. dried oregano

  17. 1 tsp. salt

  18. 1 tsp. pepper

  1. For Meatballs:

  2. Combine beef, breadcrumbs, Parmesan, parsley, oregano and salt in a large bowl. Shape into 1 inch diameter meatballs.

  3. For Soup. Bring broth to a boil in a large saucepan. Add meatballs and boil 5 minutes. Add tomatoes with juices, carrots, potatoes, onions, garlic, thyme, oregano, salt and pepper. Reduce heat and simmer until vegetables are tender, about 45 minutes.
