  1. In a large mixing bowl, combine the flour, cinnamon, ginger, and baking soda. In a separate large bowl, cream the butter and brown sugar with an electric mixer. Add the eggs one at a time, then beat in the molasses. Slowly add the dry ingredients, beating after each addition (the dough will become quite stiff). Divide the dough in half, shape into disks, and wrap in plastic. Chill for 1 to 2 hours or until the dough is firm enough to roll. Heat the oven to 350°. On a lightly floured surface, roll out one piece of dough to a 1/8- to 1/4-inch thickness. Use a 5-inch gingerbread person cookie cutter to cut the dough and use a spatula to transfer the gingerbread people to an ungreased baking sheet. Bake for 10 minutes or until the cookies are lightly browned. Cool thoroughly. Repeat the process with the remaining dough. To assemble a kit, line a 9-inch square plastic container with tissue paper, add about 4 undecorated cookies, candies for decorating the cookies, and a tube of frosting. Design a label to affix to the lid. Makes 4 to 5 kits (18 to 20 five-inch cookies).
