  1. 1 1/2 lbs potatoes (any kind, peeled or unpeeled) 4 (3/4 ounce) wedges Laughing Cow light swiss cheese (any flavor) salt , to taste

  1. Scrub and cut potatoes into 1" chunks.

  2. Place in a medium sauce pan and cover with water.

  3. Bring to a boil and reduce heat.

  4. Simmer about 15 minutes or until tender.

  5. When potatoes are cooked drain off some of the water and reserve.

  6. Add cheese wedges to potatoes and mash, adding reserved potato water as necessary. ?
