  1. CAKE :

  2. 1 box Duncan Hines white cake mix

  3. 1/2 cup sugar

  4. 3/4 cup vegetable oil (Wesson or Enova)

  5. 1/4 teaspoon almond extract

  6. 4 egg s

  7. 1 8 ounce carton of sour cream

  8. FROSTING :

  9. 2 egg whites

  10. 3/4 cup sugar

  11. 1/3 cup corn syrup

  12. 2 tablespoons water

  13. 1/4 teaspoon salt

  14. 1/4 teaspoon cream of tartar

  15. 1 teaspoon vanilla

  16. GARNISH:

  17. Coconut

  1. CAKE:

  2. In a large mixing bowl, mix together all ingredients. Beat at high speed until thorougly mixed. Grease and flour 2 - 9 inch round cake pans. Pour ½ mixture into each cake pan. Bake at 350 degrees F for 20 - 25 minutes - or until a toothpick inserted into the center of the cake comes out clean. DO NOT OVERBAKE. Cool, Frost with “7 Minute Frosting” and sprinkle with coconut.

  3. FROSTING:

  4. In a double boiler, over low heat, beat all ingredients until of a frosting consistency. Makes enough frosting for one 2-layer cake.
