  1. 1/2 lb Boneless tender beef steak

  1. Cut beef across grain into thin strips.

  2. Combine 1 Tb.

  3. each cornstarch and soy sauce with sugar and garlic in small bowl; stir in beef.

  4. Let stand 15 minutes.

  5. Meanwhile, combine water, remaining 3 Tb.

  6. soy sauce, 4 tsp.

  7. cornstarch, vinegar and red pepper; set aside.

  8. Heat 1 Tb.

  9. oil in hot wok or large skillet over high heat.

  10. Add beef and stir-fry 1 minute; remove.

  11. Heat remaining 2 Tb.

  12. oil in same pan.

  13. Add cauliflowerets; lightly sprinkle with salt and stir-fry 2 minutes.

  14. Add onion and green pepper; stir-fry 4 minutes.

  15. Stir in beef and soy sauce mixture; cook and stir until sauce boils and thickens.

  16. Serves: 2
