  1. 1 (8-ounce) bottle oil-free Italian dressing, warmed

  2. 1 skinless broiler-fryer chicken, cut into 8 pieces 1 cup dry, fine breadcrumbs

  3. 1 teaspoon ginger

  4. 1/2 teaspoon freshly ground black pepper

  1. Preheat oven to 350 degrees F. Pour warm Italian dressing over chicken, cover, refrigerate and marinate for at least 4 hours. Cover a 9 by 15-inch baking pan with foil and spray with cooking spray. In shallow dish, combine breadcrumbs, ginger and pepper. Remove chicken from marinade and roll each piece in crumb mixture; arrange in baking pan. Place in oven and bake until fork can be inserted in chicken with ease, about 1 hour.
