  1. 2 eggs, lightly beaten

  2. 1 tablespoon toasted sesame oil

  3. 1 medium red bell pepper, diced

  4. 4 cloves garlic, minced

  5. 1 tablespoon minced fresh ginger

  6. 1 10-ounce package frozen vegetable mix (suggestion: peas, corn and carrots), rinsed under cold water

  7. 3 cups cooked, short-grain brown rice

  8. 2 cups baby spinach

  9. 1 tablespoon reduced-sodium soy sauce

  10. 2 tablespoons rice vinegar

  11. 4 scallions, thinly sliced Nonstick cooking spray

  1. Coat a large wok or skillet with cooking spray and place over medium heat. Pour in eggs and cook 30 seconds to 1 minute, until set, then fold in half. Transfer to a plate. Thinly slice.
