  2. ONION PAKORA (VENGAYA PAKORA)

  7. 2 tsp Ghee

  8. 1 pinch Baking soda

  9. 1 c Bengal gram flour

  11. 1/2 c Rice flour

  12. 2 tbsp Ghee

  13. 3 Onions -- finely chopped

  14. 1 Potato -- finely chopped

  15. A piece of ginger - 1 inch, -- peeled and minced

  16. 4 Green chilies -- finely chopped

  17. 1 tsp Chili powder

  18. 1 bn Cilantro (coriander) -- finely chopped

  19. Salt -- to taste

  20. Water -- as required

  21. Oil -- for deep-frying

  22. Place 2 tsp. ghee and baking soda in a mixing bowl. Rub together

  23. until frothy. Add the remaining ingredients and combine well, using

  24. sufficient water to make a thick batter.

  25. Heat oil in a heavy frying pan. Drop spoonfuls of batter into the oil.

  26. Fry the pakoras until golden in color. When cooked, drain the excess oil

  27. on a sheet of brown paper or paper towels.

  28. Serve hot with chutney.
