  1. Pork Frittata with Spicy Apples

  2. 1 large potato, cut into chunks

  3. 500g pork mince

  4. 1 medium onion, finely chopped

  5. 2 tsp dried sage

  6. 2 Tbsp chives, finely chopped

  7. 1 lightly beaten egg

  8. salt and pepper to taste

  9. 2 tsp oil

  10. 3 medium apples

  11. 20g butter

  12. 1/2 cup water

  13. 1/2 tsp ground ginger

  14. 1/2 tsp mixed spice

  15. 2 Tbsp fruit chutney

  16. Boil the potato until just soft. Mash until chunks are just broken

  17. up; don't over mash. Put potato, mince, onion, herbs and egg in

  18. a bowl and combine thoroughly. Fatten the mixture into a lightly

  19. oiled frying pan (about 20cm) cook for 8 minutes over a medium

  20. heat. Slide the frittata onto a dinner plate. Wipe the pan with a paper

  21. towel, lightly brush with oil and place upside down over the plate.

  22. Invert the plate over pan to replace the frittata. Cook a further

  23. 8 minutes. Serve with the apples.

  24. To Make Spiced Apples: Peel, core and slice the apples thinly.

  25. Heat butter in a small pan and stir-fry over a low heat 2 minutes.

  26. Add the water, spices and chutney; cover, simmer for 15 minutes,

  27. stirring occasionally.
