  2. 6 Rainbow Trout fillets

  3. 1/2 Cup butter

  4. 4 Tbsp. green onion -- chopped

  5. 2 Tbsp. parsley -- chopped

  6. 3 Cloves garlic -- minced

  7. 1 Tbsp. lemon juice

  8. 1 Can sliced mushrooms -- (8 oz.) drained

  9. 1 Can artichoke hearts -- (14 oz) sliced,

  10. drained 1 Tsp. salt

  11. 1/2 Tsp. cayene pepper

  1. Pat rainbow trout fillets with a paper towel and place in flat bakingdish. Melt butter in sauce pan and saute the green onions, parsley andgarlic until tender. Add lemon juice, mushrooms, artichoke hearts,salt and pepper.

  2. Cook for a few minutes until heated thoroughly. Pour sauce over thefilets and bake in 325 degree F oven for about 20 minutes, or untilfish flakes with a fork.
