  1. 2 large eggs

  2. 2 Tbsp Dijon mustard

  3. 1 Tbsp fresh thyme leaves

  4. Kosher salt and pepper

  5. 2 slices whole-wheat sandwich bread, torn into small pieces

  6. 8 oz mushrooms, thinly sliced

  7. 4 scallions, thinly sliced

  8. 1 medium carrot, grated

  9. 1 1/2 lb ground turkey

  1. Heat oven to 375°F. Linea rimmed baking sheetwith foil.

  2. In a large bowl, whisktogether the eggs, mustard,thyme, 3/4 tsp salt and 1/2 tsppepper; stir in the bread.

  3. Add the mushrooms, scallionsand carrot, and mixto combine (some of themushrooms will break).

  4. Add the turkey and mixjust until incorporated.

  5. Transfer the mixture to theprepared baking sheet andshape into a 9 x 3 1/2-in. loaf.

  6. Bake until the internal temperatureregisters 160°F, 40to 45 minutes. Let rest for5 minutes before slicing.
