  1. 800-900g meat (chicken legs, lamb/turkey chops)

  2. 1x cup short grain rice

  3. 5x cups h

  4. 1x bunch spinach

  5. 1-2 tbs tomato paste

  1. Method:

  2. Wash the meat and place in a saucepan, cover with H2O and bring to the boil. Remove from stove once meat is cooked and drain the meat reserving the liquid.

  3. Thoroughly wash the spinach to remove all the sand and chop in largeish pieces.

  4. Pour some extra virgin olive oil into a large saucepan, over a low heat and then add the spinach. Once the spinach has wilted add the rice, stir till coated with oil and spinach.

  5. Season with S&P.

  6. Mix the tomato paste with ¾ cup of the reserved liquid or H2O. and add to the rice.

  7. Then add the meat and mix thoroughly before adding the 5 cups of H2O.

  8. Cook over a very low heat and stir constantly to ensure that the dish doesn’t stick. It should cook in approx.

  9. minutes or until rice is cooked.

  10. Take care to not overcook the spanakorizo.
