  2. 1/2 cup finely chopped flat-leaf (Italian) parsley

  3. 1 Tbsp each freshly grated lemon peel, lemon juice and olive oil

  4. 2 tsp minced garlic

  5. 1/2 tsp each salt and freshly ground pepper

  1. Bring a large pot of water to a rapid boil, add beans and cook 7 to 8 minutes until just tender. Drain well.2. Meanwhile put remaining ingredients in a serving bowl, and stir until well blended.3. Add hot beans; toss to mix and coat.
