  1. 2-3 Roma tomato es, diced

  2. 1/2 ounce pine nut s, lightly toasted

  3. 1/2 ounce sun-dried tomato es, julienne cut 1/2 ounce caper s

  4. 1/2 ounce sliced kalamata olive s

  5. 1/2 ounce julienne-cut radicchio Parmesan Lemon Fresh cracked pepper , for garnish

  1. Toast Pine Nuts. Julienne cut spinach, radicchio, sun-dried tomatoes. Dice Roma tomatoes and olives (save juice). Place all ingredients, except Parmesan cheese, in a chilled mixing bowl. Toss and serve on a decorative wide bowl. Garnish with shaved Parmesan cheese and fresh cracked pepper. Note: Radicchio is a red-leafed Italian chicory.
