  3. 1 small shallot , minced

  4. 1 to 2 teaspoons garlic , minced

  5. 2 tablespoons fresh squeezed lemon juice

  6. salt and fresh ground pepper to taste

  1. Flash cool your steamed vegetables in a bowl of ice water; drain and set aside. Ignore this step if you are making this sauce for spinach.

  2. Melt butter in saute pan over medium to medium-high heat. If using, add shallots to pan and saute until soft (about 3 minutes). Add garlic and saute until fragrant. Squeeze in lemon juice, add vegetables to reheat, and season with salt and pepper to taste.
