  1. 1 1/2 lbs. lean ground beef

  2. 1 medium onion chopped

  3. 2 cloves garlic minced

  4. 1 7oz. can green chilies

  5. 1 28 oz. can diced tomatoes undrained

  6. 1 6 oz. tomato paste

  7. 2-4 tbl. chili powder (to your taste)

  8. 1 tbl. cumin

  9. 3 c. broken tortilla chips slightly crushed (divided)

  10. 2 c. shredded mexican cheese (divided)

  1. Brown ground beef with onions and garlic until beef is no longer pink in a large skillet. Drain well. Add to skillet the green chilies, tomatoes, tomato paste and seasonings. Simmer 5-10 minutes until ingredients are well blended. In large casserole dish, spoon half of the beef mixture on to bottom of dish. Spread 1 1/2 cups of the tortilla chips over this. Sprinkle with 1 cup shredded cheese. Repeat layer of beef mixture, and tortilla chips. Bake uncovered at 400 degrees for 25-30 minutes until bubbly. Remove from oven, sprinkle with remaining cheese, then return to oven. When cheese is melted, remove from oven for serving. Yield: serves 6 Notes: This recipe can be adjusted easily to suite your tastes as to the "spicy" level that you like. We serve this with beans and rice on the side. Leftovers freeze well.
