  1. 285g butter

  2. 240g caster sugar

  3. 150g soft dark brown sugar

  4. 2 eggs

  5. 2 teaspoons vanilla extract

  6. 400g plain flour

  7. 60g cocoa powder

  8. 1 teaspoon bicarbonate of soda

  9. 1/2 a teaspoon salt

  1. Preheat oven to 180 C / gas 4.

  2. Cream together butter and sugar until light and fluffy. Beat in the eggs and vanilla. Sift together dry ingredients and stir into the mixture. Drop dough by teaspoonfuls onto ungreased baking trays. Bake for 8-9 minutes.

  3. Leave the cookies on the baking tray for a few mins after removing from the oven as they will be soft.

  4. Remove from the tray onto a wire rack to cool completely.
