  1. Rice Cream with Strawberry Sauce

  2. 1 lb small grain white rice, not instant (we use sushi rice)

  3. 3 cups water

  4. 4 cups milk

  5. 1 tsp salt

  6. 2 cups heavy cream

  7. 4 Tbsp sugar

  8. 2 tsp vanilla

  9. 2 cups strawberry preserves

  10. 1 cup water

  11. 1 Tbsp lemon juice

  12. Cook rice with water and salt for 15 minutes, covered. Add milk

  13. and cook 30 more minutes or until rice is tender and mixture is

  14. thick. Chill rice in refrigerator.

  15. Whip cream with sugar and vanilla. Gently fold whipped cream into chilled rice. Serve with strawberry sauce. Makes 10 8-oz servings.

  16. Strawberry Sauce: Place all ingredients in blender or food processor.

  17. Mix until blended. Serve with Rice Cream or ice cream. Makes 10

  18. servings.
