  1. 1 tablespoon 15ml Sweet mustard

  2. 1 teaspoon 5ml Dijon mustard

  3. 2 teaspoons 10ml Sugar

  4. 1 1/2 tablespoons 22ml Swedish vinegar

  5. (or distilled white vinegar)

  6. 1 1/2 tablespoons 22ml Cold coffee

  7. 1 Salt

  8. 1 Freshly-ground white peppercorns

  9. 3/4 cup 177ml Canola oil

  10. 1/2 cup 73g / 2.6oz Chopped dill

  1. Combine the sweet and Dijon mustard, sugar, vinegar, coffee, salt and pepper in a food processor. Drizzle canola oil into the mixture in a very slow, steady stream, until a thick consistency is formed. A whisk may also be used. Refrigerate overnight.
