  1. 1 T olive oil

  2. 1 garlic clove

  3. 1/3 c Spanish yellow onion

  4. 1/4 t crushed red pepper flakes

  5. 1/2 T ground coriander

  6. 1 T ground cumin

  7. 1 medium green pepper,

  8. 1 medium red bell pepper, seeded and chopped (you can use orange and yellow also)

  9. 1 t dried oregano

  10. 2 T chili powder

  11. 3 medium tomatoes, peeled and chopped or 1 28 oz can tomatoes

  12. 1 3/4 c cooked kidney bean, rinsed if canned

  13. 1 1/2 c rinsed canned black beans

  14. 1 3/4 c rinsed canned pinquitos (small red beans which are the sweeter variety)

  15. 1 celery stalk

  16. 1/2 c mushrooms

  17. 1/2 c ground beef substitute (made from soy protein)

  18. Tomato juice as needed

  19. 1 T fresh cilantro or parsley

  20. Salt and pepper to taste

  21. Shredded cheddar cheese or plain low fat yogurt for lower fat
