  1. 1 tbsp urad dal (split black lentils)

  2. 1 tbsp toovar (arhar) dal

  3. 1 tbsp moong dal (split green gram)

  4. 1 tbsp chana dal (split Bengal gram)

  5. 1 tbsp masoor dal (split red lentil)

  6. 1 tsp mustard seeds ( rai / sarson)

  7. 1 tsp cumin seeds (jeera)

  8. 12 mm. stick cinnamon (dalchini)

  9. 2 cloves (laung / lavang)

  10. 4 curry leaves (kadi patta)

  11. 4 small red chillies

  12. 3 green chillies, finely chopped

  13. 2 tsp finely chopped ginger (adrak)

  14. 2 tsp finely chopped garlic (lehsun)

  15. 2 tomatoes, roughly chopped

  16. 1/2 tsp garam masala

  17. 2 tbsp chopped coriander (dhania)

  18. juice of 1 lemon

  19. 2 tbsp oil

  20. salt to taste

  1. Wash all the dals. Soak for 1 hour and then drain.

  2. Add 5 teacups of water and cook in a pressure cooker until soft.

  3. Heat the oil and fry the mustard seeds, cumin seeds, cinnamon and cloves until they begin to crackle.

  4. Add the curry leaves, red chillies, ginger and garlic and fry for 1 minute.

  5. Add the tomatoes and garam masala, the dals, coriander, lemon juice and salt and boil for 8 to 10 minutes.

  6. Serve hot.
