  2. COCONUT BREAD

  6. 2 c Freshly grated coconut*

  7. 2 ea Eggs, well beaten

  8. 1 t Vanilla extract

  9. 1/4 c Seedless raisins

  10. 3 c All-purpose flour

  11. 1 pn Salt

  12. 1 c Sugar

  13. 1 c Evaporated milk

  14. 1/4 ts Ground cinnamon

  15. 2 tb Butter, melted

  16. 1 tb Baking powder

  17. In a large bowl, combine the coconut and sugar. In

  18. another bowl, combine the eggs, milk, vanilla,

  19. cinnamon, raisins, and butter. Stir this mixture into the grated coconut. Sift in the flour, baking powder,

  20. and salt. Combine, mixing until smooth. Pour the

  21. 2 greased 9-inch loaf pans, and bake in a

  22. 350 deg. F. oven for 1 hour, or until a

  23. tester comes out clean. Set the pans on wire racks to

  24. cool for 10 minutes. Remove the breads from the pans

  25. and continue cooling on the wire racks. Yield: 2 loaves

  26. Store bought grated coconut will not give this bread
