  1. Jerk Marinade for Chicken, Pork or Beef

  2. 1/4 tsp allspice

  3. 1 Scotch Bonnet pepper finely chopped or more to taste

  4. 1/2 cup pineapple juice

  5. 2-3 Tbsp soy sauce

  6. 3-4 Tbsp brown sugar

  7. 1/4 tsp. thyme, fresh is best or can use dried

  8. 3 to 4 green onions, minced

  9. 1 cup water

  10. Freshly ground black pepper to taste

  11. Puree all ingredients and add 1 cup water, pour into a saucepan

  12. and bring to a boil. Cool completely. Pour over the meat and marinate

  13. about 4 hours in the refrigerator. Grill.
