  13. 1 lemon, -- halved

  14. 2 egg yolks, -- beaten

  15. 3/4 c shredded green leaf lettuce

  16. 3 TB coarsely chopped pistachio

  17. : nuts

  18. In a soup pot, bring the stock to a gentle boil,

  19. season with the salt, pepper, and nutmeg. Then add the

  20. artichoke slivers and boil for 2 minutes. Add the

  21. asparagus and juice of the lemon. Continue to cook for 2 minutes. Turn down the heat and add the yolks , long

  22. strands will form. Adjust the seasonings. Divide the

  23. lettuce and pistachios between 4 bowls. Ladle the hot

  24. soup over the garnishes. Serve immediately.
