  2. 2 egg whites

  3. 1/4 teaspoon cream of tartar -- optional

  4. 1 cup sugar

  5. 1 tablespoon light karo syrup

  6. 1 tablespoon water

  7. 1 pinch salt

  8. 1 tablespoon vanilla extract

  1. In a medium saucepan, mix the first four ingredients. Add water and salt, mix well. Cook over low heat, whipping regularly with a wire whisk. Remone from heat when the frosting forms soft peaks. { When you pull out the whisk, the mountains will rise and the peaks will fall.} Stir in the vanilla.

  2. Spread on cake before frosting cools.

  3. Variations: This is a fairly flexible recipe. In place of the vanilla try using an equal amount of instant coffee granules, grated fresh lemon, orange or lime zest, or 3 drops peppermint oil. Caramel frosting can be made by substituting 2/3 cup brown sugar for the white sugar.
