  1. 12 large baking potatoes (red or Yukon Gold)

  2. 1 pound bacon

  3. 1 medium red onion

  4. 1 cup white vinegar

  5. 1 tablespoon celery salt

  6. 1/4 cup sugar

  1. Scrub potatoes. Boil in their jackets for 20 minutes until fork tender. Do not overcook. Once done, set aside until they are cool to the touch.

  2. While the potatoes are cooking, cook bacon to crispy in skillet. Remove bacon to drain, reserve drippings.

  3. Dice onion. Cook in reserved bacon drippings until tender.

  4. Add vinegar, celery salt and sugar. Stir.

  5. Crumble bacon, and add to pan.

  6. Slice potatoes. Add to pan. Mix until potatoes are well coated.

  7. Simmer for 5-10 minutes. Serve hot.
