  1. 2 1/2 cups flour

  2. 1 cup whole wheat flour

  3. 3 cups sugar

  4. 2 tsp baking soda

  5. 1 1/2 tsp salt

  6. 2 tsp cinnamon

  7. 1/2 tsp nutmeg

  8. 1/2 cup vegetable oil

  9. 1/2 cup applesauce or apple butter

  10. 2/3 cup water

  11. 4 eggs

  12. 2 cups canned pumpkin

  13. 1/2-1 cup chopped pecans

  14. 350 F. Spray two

  15. 9x5" loaf pans with non-stick cooking spray. In a large bowl combine flours, sugar, soda, salt, cinnamon and nutmeg. In medium bowl, combine oil, applesauce, water, eggs and pumpkin; blend well. Add wet ingredients to flour mixture; beat

  16. 1 minute at medium speed. Fold in pecans. Pour batter into greased pans. Bake at

  17. 350"F for 60 to 70 minutes or until toothpick inserted in center comes out clean. Cool

  18. 10 minutes in pan on a rack. Remove from pan and allow bread to cool completely on rack.
