  5. 3/4 c Onion, chopped

  6. 2 tb Olive Oil

  7. 1 c Rice, raw

  8. 1/4 ts Black Pepper

  9. 2 Garlic Cloves

  10. 2 1/2 c Chicken Broth

  11. 1 1/2 ts Ground Cumin

  12. 1 Red Bell Pepper

  13. Mince garlic. Remove seeds and dice bell pepper. In dutch

  14. oven, cook onion, garlic and raw rice in oil until onion is tender

  15. and rice is lightly browned. Add chicken broth and bring to a boil.

  16. Stir in cumin and black pepper. Cover tightly and simmer 20 minutes.

  17. Remove from heat. Stir in bell pepper. Let stand covered until all

  18. liquid is absorbed, about 5 minutes.
