  4. 1 cup brown lentils

  5. 4 cloves garlic, peeled

  6. 1 cinnamon stick

  7. 4 1/8-inch-thick slices peeled fresh ginger

  8. 1-2 teaspoons red curry paste (see Note) or 1 tablespoon curry powder

  9. 1/2 teaspoon salt

  10. 4 scallions, trimmed and sliced
