  2. 1 pint lima beans, shelled

  3. 2 quarts water

  4. 1/2 teaspoon salt

  5. 1 ounce fresh butter

  6. Pepper and salt, to taste

  7. 2 teaspoons scalded and chopped parsley

  8. 1 tablespoon lemon juice

  1. Instructions Put water and 1/2 teaspoon salt into a stewpan.

  2. When boiling, add freshly shelled beans and let them simmer gently until soft.

  3. Drain beans and put them into a saucepan with butter, pepper and salt, parsley, and lemon juice.

  4. Shake the saucepan over the fire until they are well mixed and serve as hot as possible.
