  1. 1 tbsp sugar

  2. 1 cup warm H

  3. 1 tsp or less - yeast

  4. 3 cups flour (maybe more!)

  5. 1 tsp salt

  6. 1/4 cup olive oil (for rising and pans)

  1. Add sugar and yeast to water, set aside for a few minutes.

  2. N.B.: After playing with this recipe for years, and preferring thinner crusts, it is best to use as little yeast as possible. Also, do not let the dough rest for long as it will rise considerably in the heat of the oven.

  3. Mix flour and salt in a bowl, make a crater and mix in yeast mixture with a fork. Knead for 5 minutes or until springy and no longer taking any more flour.

  4. Oil pan and roll dough into desired size. Bake for about 10 - 12 minutes at 400° or higher.
