  1. 300g x silken tofu

  2. 500ml x soy milk

  3. 250ml x vegetable/ olive oil blend

  4. 1tsp x apple cider vinegar

  5. 300g x raw sugar

  6. 500g spelt flour

  7. 80g coconut

  8. 120g oats (soaked in orange juice)

  9. 2 1/2 tsp bi-carb soda

  10. 1 tsp cinnamon

  11. 1tblsp lemon zest

  12. 1 grated apple

  1. Mix dry mix with 700ml wet mix and 100ml of orange juice.

  2. This needs to have the consistency of a cake when blended.

  3. This is the base of your muffins then add apples, rhubarb, grapes, pears, berries, bananas, nuts, sunflower seeds, poppy seeds, quinoa flakes etc.

  4. Use an ice cream scoop to add to muffin tray.

  5. Bake at 155 degrees for 40mins and then glaze with fruit poaching liquid.

  6. Add a piece of fruit to the top for decoration purposes.
