  1. 1 pound fettuccine

  2. 3 tablespoons extra virgin olive oil

  3. 4 ounces mixed mushrooms, sliced

  4. 1/2 cup pine nuts

  5. 3 ounces oil-packed sun-dried tomatoes, drained and chopped

  6. 3 cloves garlic, minced

  7. Freshly grated Parmesan cheese for garnish, optional

  1. Cook fettuccine according to package directions. Meanwhile, in medium sauce pan, heat oil, add mushrooms, pine nuts, sun-dried tomatoes and garlic; cook until mushrooms are softened, about 3 minutes. Remove from heat; toss with hot cooked fettuccine. Top with freshly grated Parmesan cheese.
