  1. 6 medium carrots -- cut in

  2. 1/2" chunks

  3. 1/2 cup green pepper -- chopped

  4. 1/2 cup onion -- chopped

  5. 3 chicken breasts -- boneless

  6. 10 ounces jar sweet-sour sauce

  7. 1 can pineapple chunks (16 oz.) drained

  8. 3 tablespoons cornstarch

  9. 3 tablespoons cold water rice -- cooked (hot)

  1. Preparation : In crockpot place carrots, green pepper, and onion. Top with chicken breasts. Pour sweet-sour sauce and pineapple chunks over all; cover. Cook on LOW for 7 to 8 hours (or HIGH for 3-1/2 to 4 hours). Remove chicken, keep warm. Blend cornstarch and water, stir into juices. Cover, cook on HIGH for 10 to 15 minutes or till thickened. Serve over hot cooked rice. Makes 6 servings.
