  2. MUSHROOM BACON STUFFING

  6. 6 sl Bacon

  7. 1/4 c Butter or margarine

  8. 1 lb Medium sized mushrooms

  9. - quartered 3 md Celery ribs -- sliced

  10. 1 lg Onion -- diced

  11. 1/2 ts Dried sage leaves

  12. 1/4 ts Dried marjoram leaves

  13. Salt -- to taste

  14. Freshly ground black pepper

  15. - to taste 20 sl Firm textured white bread

  16. - cubed 1 Egg -- lightly beaten

  17. In 12 skillet over medium heat, cook bacon until

  18. golden; remove to paper towels to drain. Crumble bacon

  19. into large bowl; set aside. Pour off all but 1/4 cup

  20. bacon drippings from skillet; add butter to skillet;

  21. melt over medium heat. Add mushrooms, celery, onion,

  22. sage, marjoram and pepper; cook 10 minutes, stirring

  23. occasionally until vegetables are tender. Remove from

  24. heat; add vegetable mixture to bacon in bowl. Add

  25. bread cubes; toss well to mix. Pour egg over stuffing;

  26. 12 to 14 cups, enough to stuff
