  1. 1 1/2 diced sweet onions

  2. 10 fresh basil leaves , chopped

  3. 3 cloves garlic , minced

  4. 1 (28 ounce) can tomatoes with juice

  5. 2 (28 ounce) cans diced tomatoes with juice

  6. 2 tablespoons sugar

  7. 1/2 teaspoon salt

  8. 1/2 teaspoon pepper

  9. 1/4 teaspoon red pepper flakes

  10. 2 cups heavy whipping cream

  1. saute onions,basil, and garlic in a pan sprayed with vegetable oil spray.

  2. saute till onions tender.

  3. process whole tomatoes in a blender or processor till smooth.

  4. add tomato puree,diced tomatoes and sugar to onion mixture.

  5. simmer,uncovered, about 2 hours.

  6. add seasonings and heavy cream:cook till heated through.

  7. garnish with croutons or fresh basil leaves.

  8. makes 11 cups.
