  1. 1 small head of garlic , crushed

  2. 1-2 inches fresh ginger , chopped finely

  3. 1 medium red onion , chopped finely

  4. 2 Tbs olive oil

  5. 1 1/2 lbs. extra firm tofu , mashed

  6. 1 cup rolled oats

  7. 1/3 cup tomato paste or ketchup

  8. 1/3 cup soy sauce

  9. 3 Tbs Dijon mustard

  10. 1/2 cup parsley

  11. 1 egg (optional, helps hold, but not necessary)

  1. Pre-heat oven to 350 degrees

  2. Sautee garlic, ginger and onion in olive oil

  3. Mix together all ingredients

  4. Press into a well oiled glass loaf pan (the acid in the tomatoes will react with metal and affect the flavor)

  5. Bake for 1 hour

  6. Cool 5-10 minutes before serving
