  1. Cooking spray

  2. 170g honey

  3. 130g natural creamy peanut butter

  4. 40g maple syrup

  5. 1 tbsp canola oil

  6. 55g light brown sugar

  7. 1/4; tsp ground cinnamon

  8. 1 tsp vanilla essence

  9. 160g rolled oats

  10. 70g crisp brown rice cereal

  11. 20g toasted wheat germ

  12. 70g chopped roasted peanuts

  13. 60g chopped dried apricots

  14. 60g chopped dried figs

  15. 1/2; tsp salt

  1. Oatmeal peanut butter energy bars 1) Spray a 20 by 30cm baking dish with cooking spray and set aside.

  2. In a small saucepan over medium heat, combine honey, peanut butter, maple syrup, canola oil, brown sugar, cinnamon. Stir and cook until mixture just begins to bubble, about 3 to 5 mins. Remove from heat and stir in vanilla essence.

  3. In a large bowl, combine oats, rice cereal, wheat germ, peanuts, apricots, figs and salt.

  4. Pour peanut butter mixture over oatmeal mixture and stir gently with a spatula until well combined. Transfer to baking dish, cover with parchment paper and press firmly into dish. Allow to cool completely (will cool faster in the refrigerator). Cut into squares or bars.
