  1. 2 cups 320g / 11oz Cooked brown rice

  2. 3 cups 711ml Sweet apples - peeled, (small) coarsely shredded

  3. 1/3 cup 78ml Apple juice

  4. 1 tablespoon 15ml Firmly packed brown sugar

  5. 2 teaspoons 10ml Lemon juice

  6. 1 teaspoon 5ml Vanilla extract

  7. 1/2 teaspoon 2 1/2ml Ground cinnamon

  8. Ground nutmeg - 1/16

  1. Preheat oven to 350 degrees. Lightly oil a 1 1/2-quart casserole or spray with a nonstick cooking spray. In a large bowl, combine all ingredients. Mix well. Spoon into prepared pan. Cover tightly and bake 45 minutes. Serve hot. This recipe provides 8 servings.
