  1. 10 cups chicken broth

  2. 3/4 cup uncooked pearl barley

  3. 448 g sliced mushrooms

  4. 3 large carrots, peeled and chopped

  5. 3 large stalks celery, chopped

  6. 2 cups diced, cooked chicken

  7. 1 tbsp. dried dillweed

  8. 3 tbsp. lemon juice

  9. 1 tsp. salt

  10. 1/2 tsp. pepper

  1. Place chicken broth in a large pot and bring to a boil over medium heat. Add barley, mushrooms, carrots and celery. Reduce heat and simmer about 40 minutes until barley is tender. Stir in diced chicken, dill, lemon juice, salt and pepper. Simmer 5 minutes. Serve hot.
