  2. 1/2 cup soy sauce

  3. 3-4 tblsp liquid smoke

  4. 1/8 cup water

  5. 1 tblsp onion powder

  6. 1 tsp garlic powder

  7. 1 tblsp (or more) fresh ground black pepper

  8. 1 tsp honey

  9. 1 lb firm or extra firm tofu

  10. Cut and drain the tofu. I usually take a 1 lb cube, cut it in

  11. half, and then slice it into strips on its short side. Strips

  12. should be about 4-5 mm in thickness. They may look big, but they'll

  13. shrink to about half their size.

  14. Mix all the marinade ingredients together well. Put the tofu in

  15. a single layer in a shallow baking pan or cookie sheet and pour

  16. the marinade over it. Let soak for several hours or overnight.

  17. Drain excess liquid (and reuse!) and dry tofu in food dehydrator or warm (200 F) oven. This will take probably 4-8 hours, depending

  18. on weather. If you live in a sunny, dry climate (Colorado in the

  19. summer), you can sun dry it, it'll take all day. If you dry indoors

  20. in the winter, your house gets filled with a wonderful smoky smell.

  21. If you're drying in the oven, you'll need to flip the tofu over

  22. hourly so it dries evenly.

  23. The stuff is delicious and keeps indefinitely. Dry the stuff until

  24. it's very chewy, but not crispy.

  25. Variations:

  26. Use low-sodium soy if you want less salt (it is rather salty)

  27. Use tabasco or ground cayenne if you want it hot.

  28. Chili powder makes chili jerky.

  29. Oregano and basil makes pizza jerky.
