  1. 2-3 fresh thighs and drumsticks

  2. 2 tomatoes finely chopped

  3. about 12 cherry tomatoes

  4. 1 red pepper

  5. 3 TB ketchup

  6. 1 33cl bottle or can of beer

  7. 1 onion finely chopped

  8. 3 garlic cloves finely chopped

  9. 1 ts sweet paprika

  10. 1 ts spicy paprika

  11. 3 TB olive oil

  12. salt and pepper to taste

  1. DIRECTIONS Start by heating the oil over medium-high heat. Add the onions and garlic and cook for about 3-4 minutes. Cut the red pepper into thin strips and add to the skillet. Cook over medium heat until the vegetables begin to soften. Add the chopped tomatoes. Make a slight "x" shaped cut in the bottom of each cherry tomato and add to the skillet. Cook over medium heat for about 5 minutes. Increase the heat and add the beer. Briefly bring to a boil and then reduce the heat to low and start to simmer. Add the paprikas, ketchup and some salt and pepper to your taste.

  2. Clean the chicken and lightly season with salt. Add to the sauce and cover the skillet and slowly simmer for 30-40 minutes or until the chicken is done. Turn the chicken a few times during this time to cook both sides.

  3. When done, the sauce should have reduced down to a nice semi-thick tasty sauce. Serve with some crusty bread and enjoy!
