  3. Title: New Mexican Red Chile Sauce

  6. 1/3 c New Mexico red chile powder;

  7. - mild, medium or hot

  8. 4 lg clove chopped garlic

  9. 1 tb butter

  10. 1 1/2 c chicken stock

  11. 1/2 c tomato sauce

  12. Combine all ingredients in a medium-size saucepan. Bring to a boil over medium-high heat, then reduce heat to low and simmer, uncovered, stirring occasionally, for 10 minutes. Cool before using. Contributor: Roy Olsen, from Chile Pepper Magazine --
