  3. 6 Cups chicken broth

  4. 1 Teaspoon salt if needed

  5. 6 Cups shredded greens such as cabbage -- spinach or escarole

  6. 2 eggs

  7. 1/4 Cup grated parmesan cheese

  8. 1/2 Cup seasoned croutons -- homemade or purchased

  1. Peel and split garlic. Add it to te broth and salt to taste. ring to aboil, add greens and simmer for 5 minutes. eat egg with cheese. Justbefore serving, pour the egg mixture gradually into the soup, stirringuntil the egg sets. Top with croutons.
