  5. 2 7 oz. pkg Udon Noodles

  6. 2 tb Extra-Virgin Olive Oil

  7. 1/4 c Fresh Lemon Juice

  8. 2 tb Grated Lemon Zest

  9. 1 ts Coarse Black Pepper, Prefer-

  10. Ably Tellicherry

  11. 1/2 c Vegetable Stock

  12. 1/2 c Fresh Grated Coconut

  13. 2 c Slivered Snow Peas

  14. 1 ts Salt

  15. 1/4 c Chopped Cilantro

  16. 1/4 c Chopped Fresh Basil

  17. Cook the Udon Noodles in a large amount of boiling salted water

  18. acording to package direstions until tender but still firm to the

  19. bite. Drain.

  20. Heat 1 tablespoon of oil in a large nonstick skillet or wok. Add lemon

  21. juice, zest, pepper, vegetable stock, and coconut and bring to a

  22. boil. Cook over moderately high heat for 2 minutes. Add the snow peas

  23. and continue to cook for about 1 minute. Remove the pan from heat,

  24. add the drained noodles and stir to blend ingredients. Season with

  25. salt. When the salad has cooled to room temperature, add the herbs

  26. 4 hours
