  1. 1 pkg. frozen chopped spinach

  2. 1 tbsp. finely minced green onion

  3. 3 egg s, beaten

  4. 1/2 C sour cream

  5. 1 C grated parmesan cheese

  6. 1 tbsp. flour

  7. 2 tbsp. butter

  8. 1/8 tsp. nutmeg

  9. 1/4 tsp. salt

  10. dash black pepper

  1. Cook spinach according to package directions, adding onion to the pan as spinach cooks.

  2. Drain well. Fold in eggs and sour cream. Blend in the parmesan cheese and flour. Stir in the butter, nutmeg, salt and pepper.

  3. Turn into a well buttered 1 quart casserole or souffle’ dish.

  4. Bake at 350° for 25 to 30 minutes or until center is set.
