  2. And cut crosswise into thin strips

  3. 1 1/2 cups 355ml Paper-thin sliced mushrooms

  4. Salt - to taste

  5. Freshly-ground black pepper - to taste

  6. 1/2 cup 118ml Extra-virgin olive oil

  7. 1/4 cup 59ml Balsamic vinegar

  8. 1 cup 198g / 7oz Paper-thin shavings Parmigiano-Reggiano

  9. Cheese

  1. Place the spinach and mushrooms in a salad bowl. Sprinkle with salt and pepper.

  2. In a small bowl, whisk the olive oil and balsamic vinegar together. Pour over the salad and toss. Sprinkle on the cheese shavings and toss again. Serve immediately.
